When you are trying to adopt a healthier lifestyle social activities that involves food can be hard to handle, such as the afternoon ”cuppa” with the accompanying biscuit or the weekend expectations from family and friends to eat more “indulging” food. You generally feel unpolite turning down what’s offered to you. Maybe you can bring the cake next time? Or bake for your visitors? This is the perfect recipe for these occasions. This banana bread contains few ingredients and is easy to make. It’s the perfect snack for any occasion, not just the weekend.

- 3 egg
- 120 gram quark (vanilla or coconut flavoured works best)
- 2 ripe bananas
- 2 tsp cinnamon
- 1 tsp cardamon (optional)
- 1 tbs honey
- 2 tbs water
- 45g soya flour (alternatively coconut flour)
- 4 tsp baking powder
- A pinch of salt
- ½ tsp vanilla extract
Method: Set the oven to 175c. Mash the banana with a fork in a larger baking bowl, whip them together with the eggs, quark, cinnamon, cardamon, honey and 2 tbs of water. Add the flour, a little at the time while still whisking. Finally add the baking powder, salt and the vanilla extract. Keep whisking until you get a smooth batter.
Line a bread tin with parchment paper or oil the tin with coconut oil, however the parchment paper gives a more even result. Bake in the oven for 45min until the bread has firmed. Once cooled cut it up into ten even sized slices. These can then be placed in the freezer for later if you wish. Serve with a few raspberries and vanilla quark to make it a protein rich snack!
